The province of Alicante, in the Valencian Community of Spain, is a place where gastronomy becomes a reflection of its history, climate and Mediterranean culture. The mix of coastal and inland influences is reflected in a variety of authentic dishes that capture the unique flavours of the region.
1. Paella

2. Coca de Verduras

3. Gazpacho de Montaña
In the mountainous interior of Alicante, gazpacho takes on a different version. Instead of being a cold soup, mountain gazpacho is thick and warm. The mixture of ñoras (dried peppers), almonds and garlic is transformed into a creamy soup rich in flavour and texture.
4. Caldero
The Alicante coast brings with it exceptional fish dishes, and caldero is one of them. Cooked in an earthenware casserole, this fish stew combines the freshness of rock fish with rice and spices. Every spoonful reveals the essence of the Mediterranean in one dish.
