Autumn brings warm colours, golden landscapes and one of its most delicious treasures: chestnuts. This fruit, as well as being a symbol of the season, is a natural source of energy, perfect for making comforting recipes. In recent months, sweet chestnut cream has become a trend on social media thanks to its smooth texture, toasted flavour and versatility in the kitchen. It can be enjoyed on its own, as a filling for cakes, accompanying yoghurts or even combined with mild cheeses. Today we’ll tell you how to prepare the most viral sweet chestnut cream recipe.

STEP 1: PREPARE THE CHESTNUTS

Start by selecting fresh, firm chestnuts without cracks or blemishes. Make a small cut in the skin of each one and boil them for about 10 minutes to soften them. Then remove them from the water and peel them carefully while they are still warm (this makes the skin easier to remove). This step is key to achieving the perfect texture and avoiding any traces of shell that could ruin the smoothness of the cream.

STEP 2: COOK THE CHESTNUTS

Once peeled, place them in a saucepan with milk (or plant-based milk if you prefer a lighter option), a pinch of salt and a vanilla pod. Cook over medium-low heat for about 25 minutes, until the chestnuts are completely tender and have absorbed some of the vanilla flavour. This process intensifies the aroma and ensures that the final mixture has a creamy, smooth texture.

STEP 3: ADD THE SWEET TOUCH

When the chestnuts are ready, add brown sugar or honey—according to your taste—and a touch of cinnamon to bring out the autumnal flavours. Cook for a few more minutes, stirring gently so that the sugar dissolves completely. This step is the heart of the recipe: the right balance between sweetness and the natural flavour of the chestnuts will make all the difference.

STEP 4: BLEND AND CREATE THE PERFECT CREAM

Remove the vanilla pod and blend the mixture with a hand blender until you achieve a smooth, silky texture. If it seems too thick, add a splash of hot milk until you reach the desired consistency. The key is to achieve a creamy, shiny custard with that characteristic beige colour that makes you want to try it.

STEP 5: COOL AND ENJOY

Leave the cream to rest at room temperature and then store it in an airtight jar in the fridge. As it cools, its flavour intensifies and its texture becomes even creamier. You can use it to fill sponge cakes, accompany roasted fruit or enjoy it by the spoonful as a comforting dessert.
